Dr. Matt Chalmers [00:00:04] Alright, so there's a lot of talk, and I've said this a lot of times as well. Seed oils are bad and the whole deal, but somebody asked me a question that made me have to realize I might be explaining this wrong. What you have to understand is that, so somebody asked me, the question was asked me was if seed oils are bad and almonds are technically seeds, why do we use so much almond flour and that type of thing? Or is almond seed oil, walnut oil, like consuming those things can be bad for you. Um, the answer to that is actually no, like these seed oils are very good for you, so consuming the seeds, eating the seeds are very, good for your sunflower seeds are different because a lot of sunflower seeds or planted on around that. Is very toxic. They have a lot of lead. They have lot of heavy metals. They have lots of nasty stuff in the soil and the sunflowers will suck that out and put it in the sunflower seeds. So be a little bit careful with sunflower seeds, but eating the actual seeds is not a big deal. It's kind of the same question of is milk inflammatory and terrible and bad for you cows milk. And the answer to that is no cows. Milk is one of the best things you can put in your body, but let's look at the things that make both cow milk. One of the best things for you and seeds like almonds, one of the best thing for you to consume, but seed oil and cow milk are also horribly toxic to us. So what are the two things sharing common? The processing. So what ends up happening is that when we have these seeds and we eat them, we get a little bit of that linoleic acid. That's good for you. A little bit. Of only a six is good for. The problem is, is that there are no really, it's not really any longer cow milk and it's, not really any longer. Seed oil by the time we get done processing it. So again, it's not what nature made or God made. That's bad for you. It's what man has done to it. That makes it bad for you. This is why raw milk is so amazing for you. So super healthy.
Dr. Matt Chalmers [00:01:57] And why like things like raw goat milk that's been fermented is one of the best things you can put in your body for your gut. Um, helps create short chain fatty acid function that can't ensure chain fatty acids can't be, uh, stores that we utilize for fuel source. And it brings up ketone function. Ketone function is extremely important for brain health and it's toxic to cancer cells. So these types of things are super important to consume the way that we're getting them from the store or from whatever is what's actually killing us. So the processing is what bad. So for instance, you take milk, this is, I'll use this as my example, a lot of times people have heard the term cream always rises to the top. Well, in our milk, do you see a big thick layer of cream sitting on top of it? Because it's been homogenized. We've chemically altered it to not represent and utilize density anymore. So cream has less density than water. So it sits on the top because it an oil or it's a fat, but we've chemally altered it so that it's emulsified and it stays all mixed together. So that's terrible. We've superheated it to kill all that beneficial bacteria that already craves and requires to function. So now that stuff's dead and in the process, a lot of times we've denatured and broken down a lot the proteins. So what ends up happening is it's highly inflammatory to our body. Our body sees it and goes, what the hell is this? Like, I don't recognize this. This is obviously chemically and functionally different than what I want. And so we're going to put up barriers to it. Chemically. That's the inflammation that's created by consuming processed cow's milk, which is why raw cow's. Milk is so fantastically healthy for you. And probably also why our government is so dead set against it. If you've noticed all the things that are unhealthy, our government pushes on us like crazy.
Dr. Matt Chalmers [00:03:40] And anything that's beneficial to us, our government wildly restricts. So it restricts cannabis. It restricts all the psychedelics that we know fixes PTSD, depression, addiction, things like that, that are highly functional and important for personal development and spiritual growth. They restrict testosterone levels, testosterone function. They restrict, you know, they're telling everybody not to eat cholesterol, which is incredibly critical for overall health. So that's kind of how it goes together. Yeah, I would want to look at that raw milk that, you know, the kids were hospitalized for, um, at the end of the day, what we end up seeing. So again, with the nuts, when you come back to these seed oils is that it's the processing we do to the hydrogenation, all the, all the trash do we do it to get it to the point where it's now a shelf stable oil, like, you know, those sort of things. Now, some of these things aren't from seeds to begin with, uh, like you know canola is just a big munch of, of, of processed junk. Uh, and margarine is just a whole bunch of process, you know, junk. So those are some of the things that we see are wildly dangerous, um, and problematic. So what we're doing to these foods, what we are doing to these things are creating the biggest issue for us. And so what we have to end up doing is be, okay, let's, let's get away from the processing. Let's get it away from what we, you know, we're doing to mess with these things and move back. So, you know, those are some of the things that when we start looking at this, That's some of the stuff you have to recognize. So for instance, you know, like if you drop the consumption of say, almonds, uh, we have lots of downsides. Like I said, the butyric acid that your body creates in the gut from the fiber of the almond is really, really important to overall health function, uh so it increases good, good quality food for the gut and for the colon specifically the short chain fatty acids that the buterate actually create from the, the pulp of the fiber from the from the almond. That fermentation process are really important for the gut. And so not only does it start bringing into further function in ketosis, but it gets us it helps with reduction of insulin resistance. And so we start pushing back against those other things. And these things can start having a significant effect on all sorts of things in the body, ulcerative colitis, you know, some there's some research out there that helps push back against Crohn's. And there's a whole towards corticotosis helps with depression, schizophrenia, uh, diabetes, dementia, Alzheimer's, all those other things.
Dr. Matt Chalmers [00:06:15] So, uh, moving your body into that direction is going to be highly beneficial. The other thing is we're using, um, if you're using almond flour, instead of say wheat flour, what you're going to end up seeing is you're going to see a reduction in the amount of glyphosate that you're consuming. Uh, glyphous state is roundup, which is also extremely toxic. It's sprayed on the wheat to kill it right before it's harvested. So the idea that, well, it'll get washed off by the rain. That's not what happens is that it's sprayed on everything to kill the entire field. So there's no green. Cause what happens if you harvest a field this big and there's just a little bit of green, that little bit of Green will rot and destroy the entire crop. So they spray it with glyphosate, which is round up to kill everything. And because all of these crops are a little bit roundup resistant, they've got to spray a ton of roundup on it to kill it. And so now you have all this glyphous eight fresh on your food when they harvest it and they pull it out. So Glyphosate is also a big problem that we're running against. And a lot of times you're going to see that with wheat products that you're not going to necessarily see with clean nuts and pecans and almonds and walnuts and things like that. So the question of, should we eat nuts? Absolutely. So the fats that are in nuts are going to be really healthy for you. The fiber that's in these nuts is going to highly effective for your gut gut function to clean all that stuff up and move through. And so there's a lot of these things that we've got to make sure that we bring in. Some of the issues we see, uh, with gut function, this is one of the things we do after we kill parasites and reset yeast and that type of thing, and then start restoring probiotic function.
Dr. Matt Chalmers [00:07:46] The great thing about it is that what happens when you feed a bacteria is that it multiplies. And so what ends up happening in gut flora is if we can feed the body high quality lot, large volume function, what ends of happening is that the good bacteria that we're trying to cultivate and grow will have something to eat and they will grow. And so Even if you have low levels of some of these bacteria to start with, as you start putting more and more and more of this stuff in, say, again, we're using almond flour as an example, but there's a lot of things. As we eat more and more almond flour, the body can make more and more butyrate and the bacteria that make that buty rate get more and more function because there's more and more food to eat. So as they eat more and more food, they reproduce and they grow. And so now it's easier and easier and easier for your body to produce these highly beneficial chemicals. Your gut flora will change over time with the things that you, you feed it. And so if you say, okay, I have this goal of, I want to go here, right? Increase short chain fatty acid function so I can start helping with ketosis function in my patients or in myself or whatever. Then some of you are trying to find something to do besides just drink MCT oil and olive oil all day long, which is a great way to work, but good luck staying on that program. Uh, some of these things you can start to do, you can start using almond flour and some of your cookies and cakes and things like that. And we do a lot of that with our patients is we say, replace all these things and they'll kind of go back together. Um, but that's the purpose is to reset and feed the gut because your gut will start to produce more of the bacteria that are eating fat. So whatever bacteria you want to be, to be grow, just keep feeding them and that stuff.
Dr. Matt Chalmers [00:09:27] And so that's one of the things that we, when we look at our diet, when you look at how much processing food, processed food are we consuming. What does that process food doing to our bodies from a killing good bacteria, shifting our gut microbiome, like all those things we've got to kind of take into account and remember your body only has the chemicals it has to make things out of. So if we don't give the body the chemicals that requires, then what ends up happening is that it can't make the things it's supposed to. Um, one of the things that we see with dementia is that your brain is literally starving to death. That's one of reasons that it starts failing because it becomes so insulin resistant. It can't move the glucose into the system. And because we have high insulin, we can't produce any ketones from fat because your body can't shift over into the fat function. So if we can start breaking down that insulin resistance with things like almond flour, there's a lot of things that you do for this, but almond flour for example, to increase that butyrate function, increase that short chain fatty acid creation and increase that ketonic function throughout the body so we can actually feed the brain a fuel source it can work on and then have it give it some functionality. That's one of the things we've got to start focusing on. So if you're worried about colon health, if you worried about gut health, if you worry about anti-cancer function, we need to really start looking at what we're feeding the body and how we're feeding the the body. Because if you are eating the pecans and the almonds and the walnuts, that's fantastic. There's lots of benefit to that. If you'll powderize them, your body has a higher chance, because it's still fiber. And remember, I get it. People still think of calories are a thing. You got to get off that. But when you powderize it, That fiber, which never gets in the body. So doesn't count. It's not going to make you fat. In fact, in this case, it radically reduces your fat function because that fiber is going to be turned into different things from the bacteria in your gut and those different things are going to help your body to process and break down and utilize fat as a fuel source.
Dr. Matt Chalmers [00:11:19] So that's one of those big things. Cause remember, and again, we'll get into this later. When you have high insulin, your body cannot shift into a fat burning state won't happen. So We have to do things. You have to eat things to actually start shifting that insulin resistance. So your body doesn't have so much insulin all the time and it has more access to fat as a fuel source. Um, you're going to see this especially in guys who are in amorphous like me. So if you're a big heavy person and you get fat easy, this is going to be a more important thing for you. This is one of the reasons there's many, this is one other reasons that being obese is typically unhealthy because your gut flora is set wrong. Because if you're metabolically healthy, you will not hold fat. And so if you are holding fat, especially around the waist, we know for a fact that you're metabolically unhealthy. Like you don't have to ask the question. It's, you know, yep, you know, large, large waste you're metabolically unhealthy, so, uh, if you guys are wondering about the seed oils, the processing of the seed oils is what's bad. Um, if it's on a box or in a bag and it says soy, if it says, you knows, you know, grape seed oil, you know, whatever, you know, sunflower oil. Those type of oils that are in boxes and bags are processed and they're bad. Eating the actual nuts, eating the actual seeds, like I said, sunflower has some toxicity issues with it, but eating the actually seeds, as long as they're organic and clean, that's fine and you guys are gonna do good with that. So I hope that kind of clears up the issue of if seed oils are bad, can I eat the seeds? So yes.
